WHAT IS GRANOLA ?
At its most basic level, granola is just a mixture of oats, nuts, seeds, and fruit that has been coated in a sugar-and-oil mixture and baked until it is flavorfully crispy and toasty. My standard granola recipe is:
Oats, 4 cups
a cup of nuts and seeds
1/2 cup of dried fruit
1/2 cup sugar, 1/2 cup oil
extracts or spices to add flavour
I just switch out different nuts, seeds, fruit, oils, sweeteners, and flavourings to create several kinds of granola.
The homemade granola recipe I've included here is pretty traditional and works with almost anything. I'll provide some additional flavours and add-ins so you can play with customising it.

HOW GRANOLA IS CRUNCHY?
Granola's traditional crunchy and clumpy texture is a result of the oil and sugar mixture. The oil prevents the oats, nuts, and seeds from being excessively dry during toasting, and the melted sugars give the finished product an additional crunch. Although it could be tempting to cut the oil or sugar, remember that doing so will significantly alter the resulting granola's texture.
Granola is best made with old-fashioned or plain rolled oats since they have more texture than quick oats. It is possible to use fast oats, but because they are frequently quite thin and delicate, they don't add as much texture to the finished granola
